The combination of cucumber, celery and mint make this smoothie light and refreshing and perfect for kicking off a day of detox. A small serving of pineapple serves to slightly sweeten and is a great source of immune boosting vitamin C. Keep in mind this smoothie is not designed for taste, but rather to promote your body’s natural detoxification process. However, it does taste pretty good considering it’s almost only veggies.

Garden Greens Smoothie
- 2 inches frozen cucumber
- 1 stalk celery, chopped
- 1/2 cup frozen pineapple
- 1 handful kale
- 1 half avocado
- 1/4 cup mint leaves loosely packed
- 1/4 cup parsley loosely packed
- 1.5 cup unsweetened, vanilla coconut milk or as much as needed
Combine all ingredients, adding in coconut milk first. Blend with Vitamix or high speed blender and serve.
